Family firm’s tasty profits with top quality ice cream and frozen yogurt
Paganini is a family-owned Irish company which was founded in 1990 by Tomás Murphy who began making ice cream using a classic Italian recipe on his dairy farm, Coolhull Farm, in Wexford.
Today the company still specialises in dairy and makes a full range of premium ice cream and frozen desserts using the raw milk from Coolhull Farm.
Bord Bia acknowledged the innovation of this dairy and bakery by presenting Paganini with the Innovation Award in the 2013 Bord Bia Food & Drink Awards.
Raw milk and cream from the Murphy Family Farm in Coolhull, Wexford is a key input to all Paganini’s dairy desserts and ice-cream.
Cheesecakes and all dairy ingredients are pasteurised onsite to ensure optimal food safety, and the best available ingredients are used to compliment the best of Irish dairy ingredients, including fresh whole eggs from Wexford, Bramley apples from Co Armagh, Belgian chocolate and the highest quality Italian flavour pastes.
Coolhull Farm Apple Pie Cheesecake was shortlisted for the Product of the Show Awards at IFEX 2016.
“We’ve taken a new twist on the traditional Irish favourite of apple tart with icecream or cream,” commented Barry Murphy, managing director, Paganini.
“We are still using the same core ingredients of Bramley apples and Irish Dairy but have brought it to a whole new level. These flavours balance each other perfectly.
“Some of the best innovations involve doing similar things a little differently and that is what we are doing with the Coolhull Farm range,” added Mr Murphy. “We have brought everything that is really great about Paganini together, added a little bit of extra luxury and then presented these wonderful Irish desserts innovatively.”
