Unique UCC part-time food stud­ies


The Food In­dus­try Train­ing Unit (FITU), UCC, pro­vides a range of part-time diploma and con­tin­u­ing pro­fes­sional de­vel­op­ment cour­ses across food and agri-re­lated ar­eas such as food sci­ence and tech­nol­ogy, spe­cial­ity food pro­duc­tion, busi­ness and man­u­fac­tur­ing man­age­ment and cor­po­rate di­rec­tion (food busi­ness).

Since 1993, the unit has been com­mit­ted to devel­op­ing and de­liv­er­ing pro­grammes which sat­isfy the evolv­ing needs of the Ir­ish food and drinks sec­tor.

Ap­pli­ca­tions are be­ing taken for two long run­ning part- time pro­grammes — The Diploma in Spe­cial­ity Food Pro­duc­tion, and the Diploma in Food Sci­ence and Tech­nol­ogy. Both will start in Septem­ber 2017.

The Diploma in Food Sci­ence and Tech­nol­ogy has been run­ning since 1993. This course gives par­tic­i­pants an op­por­tu­nity to gain an un­der­stand­ing and knowl­edge of food sci­ence, and mi­cro­bi­ol­ogy, food pro­cess­ing tech­nol­ogy, nu­tri­tion and food busi­ness and fa­cil­i­tates ca­reer de­vel­op­ment. Par­tic­u­lar em­pha­sis is placed on link­ing ba­sic prin­ci­ples with prac­ti­cal ap­pli­ca­tion in in­dus­try. This diploma has been very ben­e­fi­cial to the de­vel­op­ment, suc­cess and progress of the grad­u­ates and their food in­dus­try em­ploy­ers.

The Diploma in Spe­cial­ity Food Pro­duc­tion was first of­fered in 2005, and since then UCC has pro­vided ed­u­ca­tion and train­ing to more than 200 peo­ple work­ing in the ar­ti­san and spe­cial­ity food sec­tor.

In recog­ni­tion of the im­por­tance of the sec­tor the Depart­ment of Agri­cul­ture, Food and the Ma­rine will pro­vide fund­ing for stu­dents on the next cy­cle of this Diploma. UCC for its part pro­vides this spe­cial­ist ed­u­ca­tion by draw­ing on the ex­per­tise of both in­ter­nal and ex­ter­nal ed­u­ca­tors, pro­fes­sion­als and prac­ti­tion­ers. Many grad­u­ates of the Diploma in Spe­cial­ity Food Pro­duc­tion have gone on the de­velop suc­cess­ful food busi­nesses — in­clud­ing Phillip O’Con­nor ( of Sey­mours Bis­cuits), Norma Din­neen ( Bo Rua Cheese) and many more.

Diploma in Spe­cial­ity Food Pro­duc­tion stu­dents dur­ing a ses­sion in the food pro­cess­ing pi­lot plant; the pro­gramme has seen many of its grad­u­ates go on the de­velop suc­cess­ful food busi­nesses.
