Mini cranberry tarts

A dash of olive oil 24 sheets of filo pastry 3 tbs of cranberry sauce

240g of Cooleeney cheese, or similar, cut into 12 chunks

50g of walnuts, roughly chopped

Heat your oven to 200C. Very lightly grease a bun tin with the olive oil.

Place two filo sheets in each hole. Set them at different angles and also bunch the sides down slightly so they form nice little nests.

Place a dollop of cranberry sauce into the pastry case, place the cheese on top and sprinkle with the walnuts and some cracked black pepper.

Place into your oven for about 10 minutes until the pastry is golden and the cheese has melted.

Allow to cool in the tin until you can handle them then place them on a wire rack.
