Boil potatoes in salted water until very soft. Drain, allow to steam dry, then mash until smooth and cool.

Add flour, beaten egg and a good pinch of salt and pepper to the mash. Using a metal spoon, bring the mixture together, then tip it out on to a lightly floured surface and knead until all the flour is incorporat­ed. The dough should be soft and springy, but not sticky.

Sprinkle a little more flour on the board and cut the dough into quarters. Roll each into a long cylinder and cut the dough, at an angle, into 2.5cm/1in pieces.

Bring a pan of salted water to the boil and drop in a few kopytka (dumplings) at a time. Gently boil for 3–4 minutes. As they rise to the top, remove with a slotted spoon and drain.

Heat the oil and butter in a large frying pan and cook the onions for 4–5 mins until soft. Add the bacon and fry until golden and crisp. Add the mushrooms, season with salt and pepper and stir in the parsley.
