MINI STEAK AND ALE PIES
Serves: 4 INGREDIENTS 4 short ribs of beef 5 shallots (halved) 1 bottle of good quality ale 3 cloves of garlic, chopped 2 sprigs of rosemary A handful of peas 4 sheets of puff pastry 1 egg (for egg wash) 4 mini baking dishes METHOD 1 Preheat oven to 200°C. 2 Season beef with salt and pepper. Heat some olive oil in a pan and fry meat until it is browned.
3 Remove from pan and fry shallots until soft. Return beef to pan with the garlic and fry.
4 Once garlic is soft, pour in ale, add rosemary and simmer for 20 minutes.
5 Remove beef and veg to a plate and allow the juices to simmer until they thicken up.
6 Shred pieces of meat and divide them between baking dishes with the veg and juices.
7 Add peas and place a sheet of puff pastry on top of each dish. Crimp edges and make a small hole in the centre.
