Low iron levels can leave you feeling weary and pale.

A healthy and rich source of this nutrient is lentils, which are also packed with fibre and protein.

Try this hearty soup at lunchtime to boost your iron intake. Ingredient­s (serves 6): 2 carrots, chopped 2 onions, chopped 2 sticks of celery, chopped 2 cloves of garlic, chopped 2 sweet potatoes 150g red lentils 1 litre of vegetable stock 1 tbsp tomato puree 1 tsp sweet paprika 1 tbsp olive oil Method: 1 Chop the onions, carrots and celery. In a large pan, heat the olive oil and sauté the vegetables for around 10 minutes, or until they have softened. 2 Add sweet potato and sauté for one minute. Then add the lentils and pour in the stock. Mix in tomato puree and sweet paprika and stir well. Cover and bring to the boil. 3 When the soup hits boiling point, turn down the heat and simmer, covered, for around 25 minutes. The soup is ready when the sweet potato is soft and the lentils are cooked through. 4 Blend until smooth and serve.
