Barbecued sweet potatoes

Serves 4, ready in 20 minutes

INGREDIENT­S

1kg medium sized sweet potatoes, scrubbed and cut into 1.5cm-thick slices (no need to peel them)

Low calorie cooking spray

Sea salt, to serve

METHOD

1 Light the barbecue for direct medium heat.

2 Lay the sweet potatoes on a non-stick baking sheet, spray with low calorie cooking spray and season to taste.

3 Place the baking sheet on the barbecue over direct medium heat and cook for 10-12 minutes or until tender, turning once and spraying again with low calorie cooking spray. Or cook in the oven at 200C/fan 180C/gas 6 for 20-25 minutes.

4 Sprinkle with sea salt to serve.

Tip:

For barbecued baked potatoes, wrap potatoes in strong foil and cook over indirect medium heat for 50 minutes to 1 hour.
