In the heart of Cambridge, the spectacula­r Varsity is unique in a number of ways. For starters, this luxurious, modern boutique is the closest hotel to the city’s historic colleges – with St John’s, Trinity, Jesus and Magdalene all a leisurely stroll away. But its real draw, particular­ly during the long, warm, summer nights, is its charming roof terrace – the only one of its kind in the city. Its serene setting and vibrant atmosphere make it one of Cambridge’s hot spots. Indeed, there are few finer, more laidback ways to take in glorious, unspoiled views of the city, especially with an array of delicious drinks. But be quick: it closes at sunset.

The River Bar Steakhouse & Grill, one of three restaurant­s that are privately owned within the Varsity, is a delightful way to spend the evening, supplement­ed by fantastic views of the river, sumptuous tender steak and a range of delicious desserts and cocktails. I settled for the homemade warm Scotch eggs (€10) for starters, followed by the surf and turf garlic king prawns with an 8oz fillet steak for the main (€38) and an Amaretto Surprise (€7) for dessert. Six is a stylish alternativ­e, located on the top floor of the hotel offering panoramic views over the city and incredible tastes on the menu, including plenty to please vegetarian­s.

With the picturesqu­e River Cam on the hotel’s doorstep, punting is a must. Take a romantic whistle-stop tour of the colleges – and don’t forget to pick up a bottle of pink blush for the journey. For those who would rather avoid the water to see the sights, a short stroll through the city is a perfect alternativ­e with plenty of shops, bars and restaurant­s along the way. Oh, and there’s always the Spa, of course (towels and robes are provided – just remember to pack your shorts).
