Crunch time for molecules in vegetables
Broccoli is good for you Scientists say they have discovered why cruciferous veg, like cabbage and broccoli, can reduce the risk of bowel cancer.
London’s Francis Crick Institute found that as the food stuffs are digested, anti-cancer chemicals are produced.
The study, produced in the journal Immunity, discovered the chemical indole-3-carbinol protected mice from cancer, even those which had high-risk genes. Prof Tim Key, from Cancer Research UK, said: “Further studies will help find out whether the molecules have the same effect in people. In the meantime there are plenty of good reasons to eat more veg.”
