Crunch time for molecules in vegetables

Broccoli is good for you Scientists say they have discovered why cruciferou­s veg, like cabbage and broccoli, can reduce the risk of bowel cancer.

London’s Francis Crick Institute found that as the food stuffs are digested, anti-cancer chemicals are produced.

The study, produced in the journal Immunity, discovered the chemical indole-3-carbinol protected mice from cancer, even those which had high-risk genes. Prof Tim Key, from Cancer Research UK, said: “Further studies will help find out whether the molecules have the same effect in people. In the meantime there are plenty of good reasons to eat more veg.”
