Blitz dry ingredient­s in a food processor. Add cubed butter and blend until a crumbly consistenc­y. Slowly add water while blending until dough just comes together.

Remove dough from processor and form into a ball. Wrap in cling film and put ball into fridge to chill for at least 30 minutes.

Peel and cube apples. Combine apple pieces, raisins and lemon juice in large bowl.

In a small bowl, mix sugar, cinnamon and 1 tbsp of flour. Add to apple mix and stir until all apples are coated. Preheat oven to 220°C and grease pie dish. Roll out two-thirds of dough to 5mm thickness. Line pie dish with dough and press edges down. Pour apple pieces into dish.

Roll out remaining dough. Put a circle to fit on top of dish, then press edges together. Use remaining dough to create decoration if you wish, then brush top with egg white.

Put pie into freezer for 15 minutes, before putting into oven. After 15 minutes, turn heat down to 175°C and bake for a further 30-35 minutes until top is golden. Remove from oven and leave to cool.
