Peel garlic, save one clove and finely chop remainder. Fry onion in oil in a saucepan over a medium-low heat for around 5 minutes until soft.

In the meantime, peel the potatoes and sweet potato and cut them into 1cm cubes.

Add celeriac and chopped garlic to saucepan and raise heat. Leave to fry for another few minutes while stirring.

Add potatoes, spices, tomatoes, cheese rind and water and boil with lid on for 10 minutes. Rinse beans, add them too, and leave to simmer for another 5–10 minutes until potatoes are tender.

Meanwhile, split remaining garlic clove in middle and rub the cut edges on the bread. Sprinkle herbs on top. Fry bread in oil or butter in a frying pan. Mix mayonnaise and Parmesan. Remove cheese rind from stew and season with miso, salt, honey and chilli flakes.
