WHERE AND WHY

In prime position on the seafront overlookin­g the West Pier, the Double Tree by Hilton Metropole is perfectly placed.

The majestic Victorian property built in 1890 has been updated to have all you’d expect from a four-star hotel including a health club with indoor pool, sauna, steam room, gym and spa. The original sweeping marble staircase only adds to the glamour.

Our double room faced straight on to Brighton beach with a balcony to soak up the sea views. Tranquil muted colours, double floorto-ceiling windows, and doors opening on to the balcony gave a feeling of space and light. There were tea and coffee facilities and the ensuite bathroom with full-size bath and shower was well stocked with toiletries.

ON THE MENU

In the beautifull­y restored dining room, 1890 At The Met, we decided to indulge in the spectacula­r Le Petit Chef experience, an immersive theatrical meal. The five-course feast plus wine pairings is served with animations projected onto the table to talk you through each one.

The culinary show opened with breads and flavoured butters before the first course appeared, a caprese salad of bocconcini mozzarella, heirloom tomatoes, rocket and radishes dressed with a balsamic glaze. Next came a bouillabai­sse, a rich seafood soup of sea bass, octopus, mussels, clams accompanie­d by grilled ciabatta and rouille sauce.

The third course, rotisserie chicken with fine beans, crispy potatoes and wild mushrooms was followed by slow braised beef, boulangère potatoes, broccoli, baby carrots, silver skin onions and red wine jus while an an orange creme brulee was the fragrant finale.

For vegetarian­s, vegans and children there are alternativ­e menus (£99 per person, with a wine pairing package from £27 for three glasses). If you fancy a classic steak or fish is your favourite dish, book a table in seafront restaurant, The Salt Room.

WHILE YOU’RE THERE

Nip across the road for stroll along the beach or even a dip in the sea. The magnificen­t Royal Pavilion and Regency garden, the seaside pleasure palace of King George IV, is only a 15-minute walk away.

Or lose yourself in The Lanes, a delightful warren of narrow alleyways lined with trendy bars and quirky independen­t shops.
