Ar­row­root is one of my favourite in­gre­di­ents. I use it in the same way as corn­flour to thicken sauces. It’s par­tic­u­larly suc­cess­ful in sweet sauces as the sauce stays clear (whereas corn­flour adds cloudi­ness). To thicken a sauce of about 300ml use 1 tbsp of ar­row­root pow­der to 2 tb­sps wa­ter, mix to a paste and stir in once the liq­uid is hot and keep stir­ring un­til thick.
