How to make zhoug

Firstly, what is zhoug? It’s a delicious spicy coriander herb sauce that will liven up almost any dish! (pronounced szoug)

You’ll need 50g coriander, including the stems, 3 tbsps chopped parsley, 2 green chillies, ½ tsp ground cumin, ¼ tsp ground cardamom, 1 tsp caster sugar, ½ tsp salt, 3 tbsps olive oil and 2 tbsps cold water. Put all the ingredient­s into a food processor and blend until just textured. If you don’t like it too hot, take out the chilli seeds before blending and only use 1 green chilli.
