I absolutely love this time of the year – spring is almost here and the sweet smell of summer is just around the corner. Nature is growing again and the kitchen gardens are beginning to produce some great spring veg, including my favourite of all – rhubarb. So in this issue of RTÉ Food along with three top Irish chefs we bring you a collection of ten recipes to see winter out and introduce the lighter tastes of spring and summer. Feast your eyes on a selection of sweet and savoury recipes which showcase some of the best Irish produce from myself, Clodagh Mc Kenna and Donal Skehan and these are complemented with some Asian avours from Fiona Uyema and of course a touch of Italy from yours truly.
