Take four key ingredient­s

This week in this series about preventing food waste and clever cooking, I’ve selected the classic – ratatouill­e that uses left overs with three or four ingredient­s added to make a delicious main meal. As it happens, this year I’ve a polytunnel overflowin­g with aubergines, tomatoes and the likes, so I’m getting creative to use up these delicious ingredient­s. In my experience, ratatouill­e, delicious as it is, is a regular leftover but you’ll be delighted with how it flavours other dishes!
