Take four key ingredients
This week in this series about preventing food waste and clever cooking, I’ve selected the classic – ratatouille that uses left overs with three or four ingredients added to make a delicious main meal. As it happens, this year I’ve a polytunnel overflowing with aubergines, tomatoes and the likes, so I’m getting creative to use up these delicious ingredients. In my experience, ratatouille, delicious as it is, is a regular leftover but you’ll be delighted with how it flavours other dishes!
