Ratatouille pasta bake
“A very easy way to use up a vegetable casserole without too much effort!”
Serves 4 Ingredients
350g cooked fusilli pasta 300g cooked ratatouille 3 tbsps basil pesto
100g grated Cheddar cheese

Pre-heat the oven to 180°C/ fan 160°C/gas 4. 2
Brush a medium size gratin dish with a little oil. Place the fusilli pasta into the gratin dish. Pour the ratatouille in and mix well. Add the basil pesto and 4 tbsps of the pasta water and mix again. 3 Sprinkle over the grated cheese and bake for about 20 minutes until the cheese has melted and is lightly golden brown. Serve immediately.
