Do you need to peel the rhubarb stalks? Not at all – just wash well and chop into usable lengths. What is the best method of cooking rhubarb?
I prefer roasting as it forms delicious caramelisation and flavours. The other cooking method I would use is poaching in a light syrup for 10 minutes and leaving to cool.
How do you get rid of the bitterness that sometimes occurs when stewing rhubarb?
Simply add some orange or apple juice.
