Overnight green tea oats

“This makes a delicious and healthy beginning to the morning, ideal to bring to work with you. Using green tea adds an unusual and tasty element – the only thing is that you have to remember to prepare it the night before!”

SERVES 2 INGREDIENT­S

60g porridge oats

200ml cold green tea

¼ tsp ground cinnamon

For the compôte

(this is optional)

80ml water

60ml sugar

1 lemongrass stalk

2 oranges, peeled and segmented

2 tsps honey (optional)

1 lemon, zest only ½ sweet apple, grated

2 tbsps blueberrie­s or blackberri­es

4 tbsps natural yoghurt, for the top

Slices of figs or berries, to finish (optional)

METHOD

1 The night before, mix the oats with the cold green tea and cinnamon and leave overnight.

2 To prepare the compôte, place the water and sugar together and bring to the boil. Reduce the heat, add

the lemongrass stalk and simmer for 5 minutes, then remove from the heat, and leave to infuse until cool. Add the orange segments and set aside.

3 When ready to serve, add the honey to the oats and grate in the apple, add the blueberrie­s or blackberri­es.

4 Spoon the oats into the bowls or pretty glasses and top with natural yoghurt and spoon over the compôte, if you are using it, and finish with the wedges of figs or berries.
