MAKES 350G
INGREDIENTS
3 clementines or easy peelers, peeled and roughly chopped
80g soft brown sugar (or to taste)
4 tbsps water
1 cinnamon stick
4 tbsps rum
METHOD
1 Place all the ingredients in a saucepan and bring to the boil. Reduce the heat and simmer slowly for about 8 to 9 minutes, stirring from time to time. Remove the cinnamon stick and spoon into a jar to keep in the fridge for up to 2 weeks.
