The Saturday evening Mass will be at 8pm in Enniscrone Church and will remain at 8pm each Saturday night for the summer months. Sunday morning Masses will continue as normal: Enniscrone 10am and Kilglass 12 noon.

Congratula­tions also to Kilglass NS who finished second. Well done to everyone involved.

The Club are holding an Easter Camp for underage players in Quigabar on Thursday next week.

Castleconn­or Handball Club were victorious in Galway when Calvin Foody and Rory McHale won the Boys U 12 Connaught A Championsh­ip final in style. Last week Calvin and Rory battled it out in the boys singles semi-final where Calvin won the tie-breaker by a few points, Calvin went on to compete in the Connacht Championsh­ip final and was beaten by an exceptiona­l Galway player. Congratula­tions Calvin and Rory on a magnificen­t performanc­e.

Niall Bourke and Cathal Jones competed in the boys U13 A Championsh­ip but it was not their day.

ENNISCRONE KILGLASS GAA: HANDBALL:

There was no winner of the Castleconn­or Blotto Jackpot or Match 3 prize. Congratula­tions to Mike Creegan who was the winner of the €50 lucky dip prize. Next week’s jackpot is €20,700. Match 3 is €200

CASTLECONN­OR LOTTO: COLÁISTE IASCAIGH:

Congratula­tions to our former pupil Eva Lavelle who was recognised at the UCD Entrance Scholars Awards ceremony. This ceremony was in recognitio­n of

1st year students who achieved 560 points or more in their Leaving Certificat­e. These awards are part of a range of UCD initiative­s put in place to recognise exceptiona­l students when they join as well as those who develop their talents while studying at UCD. A commemorat­ive plaque was also presented to our school.

It was a great honour for our school to be recognised at this prestigiou­s event. Eva along with all our 2023 leaving certificat­e graduates are great ambassador­s for our school and role models for our current students, demonstrat­ing what can be achieved with hard work and determinat­ion.

Easkey Street Festiva “Street Feast” will be happening again this year in Easkey. Keep the date - Sunday May 26 at 3pm in Clarke’s yard, off Easkey Main Street.

EASKEY STREET FESTIVAL:

Raspberry Swiss roll :ho doesn’t love a Swiss Roll and for some reason I always relate it with Easter. I love raspberry but you can make whatever flavour your taste buds require. /emon is another lovely flavour. If you don’t want to make the jam a good quality store bought jam will suffice. Play around with flavours etc once you get the knack of making the Swiss roll. A lot of people have trouble with getting the roll correct but use you tube and watch several tutorials and talk yourself through it. Ingredient­s

● 4 large eggs

● 115g caster sugar , plus extra to dust

● 1 vanilla pod, seeds only

● 75g self raising flour

● 200ml/ double cream

● 1 tsp vanilla extract

● 200g raspberrie­s

For the raspberry jam

● 150g caster sugar

● ½ lemon , zest and juice

● 350g raspberrie­s

Method

1. Preheat the oven to 190C/170C Fan/ Gas 5 and line a 23x33cm/9x13in Swiss roll tin with baking paper.

2. Place the eggs, sugar and vanilla seeds into a bowl and whisk until very pale, fluffy and thickened.

3. Sift in the flour and carefully fold in. Pour into the lined tin and smooth with a spatula until evenly spread. Bake for 10–12 minutes, or until just firm to the touch.

4. Place a sheet of baking paper, slightly bigger than the tray, onto a work surface and dust with caster sugar. 7urn the sponge out onto the paper, peel off the baking paper on the bottom of the sponge and set aside to cool a little.

5. Pour the double cream and vanilla extract into a large bowl and whip to soft peaks.

6. For the raspberry jam, heat a frying pan until hot. Add the sugar, lemon zest and juice and cook for 3–4 minutes until the sugar has dissolved. Mix in the raspberrie­s and cook for 3–5 minutes until thick. Remove from the heat and set aside to cool.

7. Spread the jam over the sponge, leaving a 2cm/1in gap around the edge. Spread the whipped cream over the top, leaving the edges, then sprinkle over the whole raspberrie­s.

8. 7ake the longest edge of the sponge and using the baking paper underneath, roll up the sponge quite tightly, making sure the filling stays inside. Roll the sponge off the parchment, dust with extra caster sugar and cut into slices to serve.
