You will need:

2 av­er­age-sized slices

of fresh pineap­ple 250ml (9fl oz) co­conut wa­ter or

light co­conut milk Pinch of ground turmeric 2 stalks of sum­mer kale, juiced

Juice of 1 small lime Chop the pineap­ple up, even the skin and the core, and add ev­ery­thing to a

high-speed blender. Add the co­conut wa­ter or light co­conut milk, which­ever you’re us­ing, the pinch of ground turmeric, the sum­mer kale juice and the lime

juice. Blend un­til sump­tu­ously frothy. Strain through a sieve, and col­lect the rich

nec­tar in a bowl un­der­neath. You can ditch the fi­brous part from the sieve. Pour into pre-chilled glasses with
