IN SEASON Rocket
Aptly named, rocket is a super leaf — one bite, and it feels like a little rocket is going off in your mouth. Wild rocket has been around for centuries, while more recently, the cultivated variety has been hitting our greengrocers’ shelves. Both are wonderful in salads and pestos, but they’re also great cooked. The hot, peppery flavour softens, giving a wonderfully savoury,
almost bitter bite, which is very welcome in casseroles, soups and pasta dishes. It only takes a few seconds to cook, so just chop the leaves and stir in at the last minute.
