I love us­ing leftover Sun­day-roast cooked veg­eta­bles to make a soup. Just chop and sweat an onion and a potato in a saucepan, then add in about a pint of chicken stock (with some gravy in it too, if pos­si­ble), bring it to the boil, then add in a cup or two of cooked veg­gies and boil them on a high heat for just half a minute or un­til they are hot, then liq­uidise with a good dash of milk or cream and some herbs too, if you like.
