My favourite Ir­ish sum­mer mem­ory would have to be in Lahinch, Co Clare. My dad played there ev­ery year in the South of Ire­land golf cham­pi­onship.

One evening he came back with a bag of wild mus­sels, which he taught me how to pre­pare. They were the sweet­est mus­sels I’ve ever eaten. And the trips my mum would take us on into the farm­ers’ mar­ket in En­nisty­mon, just a few miles from Lahinch. It was my first taste ex­pe­ri­ence of farm­house cheeses.

I can still re­mem­ber the smells. The be­gin­ning of my love af­fair with food.
