Easy fish pie

Serves 4 You will need:

5 sweet potatoes 50g butter, plus 2 tablespoon­s of butter 6 spring onions, chopped 50g flour 300ml milk, warmed 300ml stock 2 fillets hake, cut in pieces 2 fillets smoked haddock, cut in pieces Salt and freshly ground black pepper Green beans and roast cherry tomatoes, to serve 1 Peel the sweet potatoes and boil them until they are tender; then drain them and cover them. While the potatoes are cooking, make the sauce. Melt the 50g of butter in a non-stick pan, and sweat the chopped spring onions on a low heat. Sprinkle in the flour, then stir it into the butter and spring onions. Whisk in the warmed milk and the stock. Boil, and then simmer, until the sauce is smooth and thick. 2 Preheat the oven to 200°C, 395°F, Gas 6. Add the pieces of hake and the pieces of smoked haddock to the sauce in the pan. Stir gently, and simmer for a further 5-10 minutes to cook the fish, then transfer the contents of the pan to an ovenproof dish. Add the 2 tablespoon­s of butter to the potatoes, along with a pinch of salt and some freshly ground black pepper, and mash them. Spoon the mash on top of the fish, spreading it out with a fork. Bake the pie in the preheated oven for 15 minutes.
