Calzone

To make a calzone, follow the margherita pizza recipe, but instead of spreading the tomato sauce all over the base, spread it onto one half of the disc of dough, keeping 2cm free of sauce at the edge. Brush the edges of the pizza with water. Sprinkle the cheese and your choice of filling over the tomato sauce. Then fold the unsauced half over the toppings, and seal the edges of the calzone by squeezing them together. Press them with the prongs of a fork, making sure the dough doesn’t stick to the work surface. Slide the calzone onto a hot baking sheet and into a preheated oven, and bake it for 15-20 minutes, until it is golden all over. Remove the calzone from the oven, brush it with olive oil while it still hot, and serve.
