Classic cucumber pickles

Makes 6-8 340ml jars You will need: 2 large cucumbers, unpeeled and thinly sliced 2 small onions, thinly sliced 350g caster sugar 1 tablespoon salt 225ml cider vinegar or white wine vinegar

1Mix the thinly sliced cucumber and the thinly sliced onions in a large bowl. Add the caster sugar, the salt and the cider vinegar or white wine vinegar, whichever you’re using, and mix well to combine.

2Tip into jars if you’re giving the pickles as gifts, or serve them in a bowl. If you’re serving the pickles today, make them an hour in advance. If they are kept stored in jars, they’ll keep for a couple of months.
