Chocolate clusters

Makes 25 small clusters

You will need:

125g melted dark chocolate 50g chopped toasted nuts 50g chopped dried fruit (try any of the following combinatio­ns or nuts and fruit: pecan and cranberry; hazelnut and fig; pistachio and apricot; or almond and date) OR:

You will need:

125g white chocolate, melted 50g chopped candied orange peels 50g chopped stem ginger in syrup

1Put a sheet of parchment paper on a baking tray. To melt the dark or the white chocolate, whichever you’re using, put the chocolate in a bowl sitting over a saucepan containing a few centimetre­s of water. Put the saucepan on the heat and bring the water up to a simmer. Once it is simmering, take the pan off the heat and allow the chocolate to melt slowly.

2If you are using the chopped toasted nuts and chopped dried fruit, then stir your chosen nuts and dried fruit into the melted dark chocolate. Next, use two teaspoons to make small clusters on the paper. Place the clusters somewhere cool to allow them to set.

3If you are using the candied orange peel and the chopped stem ginger, stir them into the melted white chocolate, then use two teaspoons to make small clusters on the paper. Place the clusters somewhere cool to allow them to set.
