The Domestic

A classic burger

Serves 4

You will need:

• 1 tablespoon oil • 1 onion, finely diced • 500g beef mince • 50ml Guinness • 30g oats • ½ teaspoon salt • ½ teaspoon fresh thyme • Dash of Worcesters­hire sauce • 4 slices of cheese • 4 brioche buns • Gherkins and lettuce, with your preferred condiments, to serve

1 Heat the oil in a non-stick pan. Cook the finely diced onion over a medium heat until it is transparen­t. Place the beef mince in a large bowl and add the cooked and cooled diced onion, the Guinness, the oats, the salt, the fresh thyme and the dash of Worcesters­hire sauce. Combine everything without over-working the mixture, and then, using your hands, form four patties. Chill them in the fridge for at least an hour. 2 Heat the pan over a medium-hot heat, and cook the burgers for three minutes, then flip them, top them with the cheese to melt it. Cook the other side for five minutes for medium, or eight minutes for well-done. Serve the cheeseburg­ers on the brioche buns, along with the gherkins, the lettuce, and your preferred condiments.
