Former Chapter One head chef Cathal Leonard, pictured left, with his partner Sarah Ryan, is opening Potager in Terry McCoy’s former RedBank restaurant in Skerries in mid-March, serving classic food with a modern twist. You can still stay over, as Terry, pictured far left, and his son Ross will still be running the 18-room guesthouse.
