My husband says he’s never tasted tofu before. “I’ve seen you eat it,” I say, outraged. “Yes, I have eaten tofu,” he replies. “But like I said, I’ve never tasted it.” So I set about making an indulgent, colourful, kickass tofu curry that would excite carnivores and herbivores alike. (OK, and to prove him wrong, which is one of my New Year’s resolutions, you understand. So much fun!)

Plant power has truly exploded across Ireland. There’s never been a better time to introduce more veggies into your everyday menu, to flirt with veganism, or simply just to annoy your partner.
