The person

Myself ! It’s not about being selfish, but about looking after the most important person in your life. People often tell me how they put themselves last; I tell them that if they don’t look after themselves, nobody else will.

The memory

When I first walked on the grounds of my new project, [health hotel] Solar Alvura, on March 16, 2017, I fell in love with the old hotel emerging from the mist and the tropical vegetation.

The moment of the day

When I wake up in the morning with no aches or pains. Being alive to start a new day after a good night’s sleep is priceless.

The song

Dare to Live by Andrea Bocelli and Laura Pausini. It chills me right into my bones in the best way.

The movie

The Netflix series Sex Education. It has many sides to it. While it’s deep and sensitive, it’s also very funny and entertaini­ng.

The book

Can Medicine Be Cured? by Seamus O’Mahony. After reading this book, it seems like the entire medical profession needs a serious rethink. I also love The Bullet Journal Method by Ryder Carroll.

The hero

Professor Roy Taylor at Newcastle upon Tyne Hospitals NHS Foundation Trust, who has done a lot of research on the reversal of Type 2 diabetes. He has really encouraged me to keep going with my work in helping people to reverse their Type 2 diabetes.

The outfit

The blue sparkly dress I wore for my first dance in Dancing With The Stars [Season One] to the Dr Beat song. I loved the whole glitzy feel of it and the moment, along with the fact that it was a little bit sexy!

The accessory

My Gaggia coffee machine. I couldn’t live without it. I love a good-quality freshly ground coffee first thing in the morning!

The gadget

My rollers for my hair. I still use my old-fashioned rollers every time I get ready for filming, or any photo shoots. I still used them while getting ready for the

The friend

My husband, Wyatt. He has been there for me through the years and faced many challenges with me. Without him, I would be lost.

The pet hate

Dirt! I’m a clean freak. I really feel that I can only relax and de-stress when my environmen­t is clean. Living in Portugal while building my hotel has forced me to live in a basic environmen­t, which has been a great challenge.

The virtue

Honesty. Everyone who knows me, knows that I say things as they are. I don’t see any point in doing it in any other way.

The vice

Saying things people don’t want to hear! I motivate people to do what they need to do. Making lifestyle and dietary changes is not easy, and I need to go strong on people to make them make these changes.

The bar

I’m not really a pub person; I prefer restaurant­s, like Fade Street in Dublin, or Antonio Ta Certo, in Vale Do Lobo, Portugal.

The drink

Water, with some Biona cranberry juice added. I don’t like drinking plain water, and this strong juice has many health benefits. It needs to be diluted, so the sugar content of my drink is very low.

The holiday

Our first family holiday sailing to Turkey when our kids were five and seven. It was such a different holiday in an amazing place. As a hard-working mum, it’s hard to get that special time with the family when you can just relax and forget the stresses of the world.

The hotel

I am biased here, as its mine! Solar Alvura, my new health hotel in the Algarve. I can’t wait for it to be ready!

The beauty product

Estee Lauder 24hr Double Wear Stay-In-Place Makeup, and Dior Diorshow Black Out mascara. These are the staple basics to my make-up, and have been for years.

The piece of advice

The one thing you can never get back is time. If there’s something you have been meaning to do — start a hobby or sport; lose weight; stop smoking; improve your health; or get, or leave, a partner — the time is now!

The hobby

I used to love running, but my knees didn’t! My new hobby might be kayaking, since Wyatt recently got me into it in Portugal.
