When you’re peeling hard-boiled eggs, first crush the shells by rolling the eggs gently on a work surface. Next, hold the eggs under cold running water and peel away the shell with your hands. If you have very fresh eggs, wait until they’re three days old before hardboiling them, otherwise the hard-boiled whites will crumble away when peeling.
