SPICY COCONUT BEEF

Serves 4 You will need:

• 2 tablespoon­s oil

• 1 red onion, finely diced

• 500g minced beef

• 1 tablespoon garam masala

• 1 tablespoon ground coriander

• 1 teaspoon ground cumin

• 3 cloves of garlic

• 1in-piece of fresh ginger, peeled and sliced

• 1 green chilli, sliced

• 1 red pepper, sliced

• 1 large onion, roughly chopped

• 1 x 400g tin chickpeas, drained

• 2 tablespoon­s tomato paste

• 3 generous handfuls of frozen peas

• 1 x 400ml tin coconut milk

• A handful of fresh coriander and naan bread, to serve

1 Heat the oil in large pot and add the finely diced red onion and the minced beef, then stir in the garam masala, the ground coriander, the ground cumin, the garlic, the sliced fresh ginger, the sliced green chilli and the sliced red pepper. Stir over the heat until the pepper is softened and the minced beef is cooked.

2 Add the roughly chopped onion, the tinned chickpeas, the tomato paste and the frozen peas. Cook for a couple of minutes — you want to retain a little bite in the onion — then stir in the tinned coconut milk. Serve this spicy coconut beef with some fresh coriander scattered over the top, and the naan bread on the side.
