Fresh, quality food served up with a smile

Rosemary Fleming is the drive behind TEXcellent Diner and she does, indeed, hail from Texas.

However, it’s been a circuitous route that has brought Rosemary to Lombardsto­wn.

“I’ve been working in restaurant­s from a young age and while I went the corporate route and was an executive for the Girl Scouts of Northeast Texas, and also worked on the PR Team for the George Bush Library, I left it all to marry my Irish husband who is a dairy farmer,” says Rosemary.

“I stayed home for three years after becoming a mother. We have a 3 1/2 yr old daughter and 1 yr old son and I opened the diner after [former proprietor] Martin retired on the 4th of July.”

Rosemary is committed to providing top quality food, cooked and served fresh.

“I believe that food should be fresh, high quality and locally sourced, and would eventually like to replace the wagon with something a little bit larger or open a small restaurant with the same feel in the same area.,” she says.

For Rosemary it’s not just the food that inspires her at TEXcellent it’s also meeting customers and enjoying a bit of craic.

“I like small diners because it has that cozy and intimate feeling where every blue collar or white collar person feels like they’re welcome.

“I definitely love to chat and don’t know a stranger so big restaurant­s are not my cup of tea.

“I love the simplicity a diner offers and the craic and laughter enjoyed each day by engaging with my customers.”
