Alex Lavarde, the head gardener at Mount Falcon Estate, has spent the past two years preparing the soil and experiment­ing with crops on the 100-acre estate in Ballina, Co. Mayo. He now grows all the organic vegetables used by head chef, Philippe Farineau, in the acclaimed Kitchen Restaurant at Mount Falcon. The gardens are open for visits by private groups and Alex is also hosting a series of seven organic gardening classes starting on February 27 at 7.30pm.
