150g salad radishes, diced ¼ cucumber, diced Handful mint leaves, finely chopped

Handful coriander leaves, finely chopped 1 spring onion, finely diced Juice of 1 lime Sea salt flakes and freshly ground black pepper, to season

GENTLY combine all the ingredients and serve — it’s great alongside grilled fish.
