Perfect poached eggs

A WONDERFULL­Y filling and nutritious start to the day. Experiment with different types of bread: you might find sourdough easier to digest, or try my delicious breakfast bread (see recipe, right).

SERVES 2

l 4 eggs

l 2 slices sourdough or breakfast bread

l 2 handfuls fresh spinach

8-10 cherry tomatoes, halved

Salt and pepper GENTLY poach the eggs in boiling water (for around three minutes). Meanwhile, toast your preferred bread and serve with the poached eggs on top. Scatter with the spinach and cherry tomatoes. Season with salt and pepper, to taste.
