Divine dark chocolate mousse
A RICH and creamy chocolate mousse that goes a long way — to be eaten with a teaspoon and savoured!
MAKES 6 MINI PORTIONS
2 ripe avocados, peeled and mashed 40g cocoa powder 30-50ml coconut milk (or dairy), chilled 1 tbsp coconut oil 1 tsp vanilla essence 8 soft pitted dates, finely chopped 1 tbsp balsamic vinegar
TO SERVE
18 raspberries (3 per serving) Or 3 ripe pears, diced (½ per serving) IN A bowl, blitz together all the ingredients (except the berries/pears) using a hand blender. If the mixture is too thick, add more milk and briefly blitz again. Scoop into tiny espresso cups. Garnish with a handful of berries on top or half a diced pear stirred into each dish.
