SPICY AVO ON TOAST

We’ve been enjoying this for years – sometimes with a poached egg on top too. The avocado is poshed up with extra flavours to make it super special. Za’atar is a beautifull­y fragrant Middle Eastern spice, available from supermarke­ts.

Serves 4 272 calories per serving l l 4 slices of wholemeal bread l Flesh of 2 avocados l Juice of ½ a lemon l 16 cherry tomatoes, quartered l 1tsp grated lemon zest l 1tsp olive oil l A few dashes of mild vinegar (brown rice vinegar, from some supermarke­ts, is good) l A few dashes of hot sauce l A small bunch of coriander or parsley l Freshly ground black pepper l Pinches of smoked paprika l Pinches of za’atar (optional) l ½tsp sesame seeds

Toast the bread. Roughly mash up the avocado flesh in a bowl with the lemon juice, and then spread the mixture over the slices of toasted bread.

Toss the cherry tomatoes with the lemon zest, olive oil, vinegar and hot sauce. Tear the coriander or parsley leaves and mix them with the tomatoes. Season with black pepper, then divide them between the avocado-covered toast.

Sprinkle with pinches of paprika, za’atar, if using, and sesame seeds and serve.
