HOW TO MAKE QUICK BROWN BAPS
Makes 6 baps Per plain bap: 3.7g net carbs 9.3g fibre 9.6g protein 19g fat 260kcal
Olive oil, for greasing
130g (4½oz) ground almonds 30g (1oz) coconut flour (from health food stores or larger supermarkets) 20g (¾oz) coarse psyllium husk (from health food stores or larger supermarkets) 60g (2¼oz) ground golden flaxseed (from health food stores or larger supermarkets) 2tsp baking powder
1 heaped tsp salt 3 eggs
1tbsp seeds (optional)
Preheat the oven to 220°C/fan 200°C/ gas 7 and grease a baking tray with oil. In a bowl, mix the dry ingredients together. Add the eggs and 250ml water and stir through with a large spoon. When the dough is well combined, use your hands to bring it into a ball. It will thicken as the water is being absorbed. Using slightly oily hands, divide the dough into 6 and roll into balls between your palms, then flatten them into baps about 8cm across and no more than 2cm in height. Transfer them to the prepared baking tray, placed at least 4cm apart. Press a few seeds into each one, if using. Cook the baps for 18-22 minutes, until golden brown and firm to the touch.
