PIMM’S ICE LOLLIES
Serves 8 ● Prep 10 mins + freezing
● 150ml Pimm’s
● 300ml diet lemonade, gone flat
v ¼ of a cucumber, very thinly sliced
● 12 small strawberries, hulled and halved
● 2 sprigs fresh mint, leaves picked
Mix together the Pimm’s and flat lemonade. Divide the cucumber, strawberries and mint between icelolly moulds, then pour in the liquid, to about 1cm below the top. Freeze for around 1 hour, add the ice-lolly sticks, then return to the freezer for 4 hours, or until solid.
To serve, stand the bottom of the moulds in warm water for a few seconds to release the lollies.
