PIMM’S ICE LOLLIES

Serves 8 ● Prep 10 mins + freezing

● 150ml Pimm’s

● 300ml diet lemonade, gone flat

v ¼ of a cucumber, very thinly sliced

● 12 small strawberri­es, hulled and halved

● 2 sprigs fresh mint, leaves picked

Mix together the Pimm’s and flat lemonade. Divide the cucumber, strawberri­es and mint between icelolly moulds, then pour in the liquid, to about 1cm below the top. Freeze for around 1 hour, add the ice-lolly sticks, then return to the freezer for 4 hours, or until solid.

To serve, stand the bottom of the moulds in warm water for a few seconds to release the lollies.
