Nigella’s coddle is a dish too far
Poor Nigella Lawson, right, came in for a massive helping of criticism after devising her own version of coddle, the dish of the Dublin tenements which looks like nothing so much as raw sausages swimming around in dirty water. Even allowing for peak national pride around St Patrick’s Day, should we not give the Domestic Goddess kudos for trying to tweak a revolting dish for modern palates rather than excoriating her for cultural vandalism? If we play our cards right, she might step in in time for next year’s festivities to tart up and improve the recipe for bacon and cabbage, a national dish which actually is worth saving.
