OAT PANCAKES

SERVES 2 | 1.5 BITES PER SERVING INGREDIENT­S:

■ 120g oats

■ 2 tsp baking powder

■ Pinch of salt

■ 1 egg

■ 2 tbsp maple syrup

■ 150ml skimmed milk

■ Low-cal oil

■ Optional – berries and 0% yoghurt

METHOD:

Add the oats to your blender and blitz on high until you have a fine flour. Add the oat flour to a large bowl, mix well with 2 tsp baking powder and a pinch of salt. Whisk an egg, add into the oat flour with the maple syrup. Gradually pour in the skimmed milk. Whisk until smooth. Spray a large non-stick pan with low-cal oil over a medium heat. When it’s hot, pour in three small ladles of the batter and cook for a few minutes until bubbles start to form in the middle and it lifts from the pan easily. Flip and cook for about 30 seconds on the other side. Repeat with all the pancakes, stacking them on top of each other to keep them warm. You should get 8 pancakes from this mixture. Delicious served with berries and 0% yoghurt.
