VEGAN TORTILLA WRAPS

SERVES 2 | 1 BITE PER SERVING INGREDIENT­S:

■ 2 x 60g wholemeal tortilla

■ 50g low-fat hummus

■ ½ avocado

■ Sliced radish

■ 1 tomato

■ 1 red onion

■ 1 cucumber

■ 1 lime

■ Fresh coriander

■ Handful rocket

METHOD:

Place the tortilla on a hot pan and toast on each side for a few seconds until warmed through. Spread with hummus, avocado, sliced radish, red onion, cucumber, add rocket and finish with a squeeze of lime and freshly chopped coriander.
