GARLIC AND LEMON ROAST CHICKEN

INGREDIENT­S

■ Medium-sized chicken

■ ½ lemon, juiced

■ 2 minced garlic cloves

■ 1 tsp dried thyme

■ Salt and pepper

■ 2 whole, unpeeled garlic cloves

■ 800kg uncooked potatoes

METHOD

Mix the juice of the lemon, minced garlic cloves, dried thyme and rub all over chicken. Sprinkle with salt and pepper, then place the squeezed lemon inside the cavity with 2 whole, unpeeled garlic cloves. Place the chicken on a roasting dish and bake in a preheated oven at 180C for approximat­ely 80 minutes (20 minutes per 500g plus 20 minutes). Baste twice during cooking.

Serve with ¼ plate potatoes, roasted with low-cal oil and your favourite roast vegetables.
