ONE-POT FISH CURRY
SERVES 4 | 1 BITE PER SERVING
INGREDIENTS:
■ Low-cal spray oil
■ 1 large finely chopped onion
■ 1 minced garlic clove
■ 1 tsp ground turmeric
■ 1 tsp garam masala
■ 400ml light coconut milk
■ 400g seafood mix
■ 200g peas
■ 240g uncooked basmati rice
■ Chopped coriander
METHOD
Spray a large frying pan with low-cal oil over medium heat. Cook the chopped onion for 3 minutes until soft. Add the garlic, ground turmeric and garam masala, and cook for a further minute. Add a splash of water to prevent sticking. Pour in the light coconut milk and bring to boil. Cover and simmer for 10 minutes. Add the seafood mix, peas and cook for 3 minutes until the fish is starting to flake; check for bones. Serve with ¼ plate of basmati rice, garnish with freshly chopped coriander.
