GREEN EGGS

SERVES 2 | 1 BITE PER SERVING INGREDIENT­S:

■ 1 x avocado

■ 1 x lime

■ Low-cal oil

■ 2 x eggs

■ 2 x 30g wholemeal bread

■ 1 tbsp rapeseed oil

■ Salt and pepper

■ ½ tsp paprika

■ ½ tsp sesame seeds

■ Spring onions

METHOD:

Slice an avocado in half, scoop out flesh and place into a bowl. Add the juice of 1 lime, a pinch of salt and pepper and mash the avocado.

Spray some low-cal oil on a large nonstick frying pan. Crack in 2 eggs and fry as you like them.

Toast the wholemeal bread.

Smear the smashed avocado onto the two slices of toast.

Mix the rapeseed oil with ½ tsp of paprika and ½ tsp of sesame seeds.

Place the fried eggs on top of the toast with avocado.

Drizzle the paprika and sesame oil on top of the egg. Top with finely sliced spring onions.
