IT’S all happening for the Chapeltown chef Shaun O’Connor in recent times. Shaun received the prestigiou­s Catex Exhibition Award last year.In addition to this he was recently awarded a bronze medal at the Chef Ireland National Competitio­ns of Food and Beverage Live 2018 in the City West Hotel, Dublin, in which he took part in the Irish Junior Lamb Competitio­n.

Shaun’s dish consisted of roasted rump of Kerry Lamb, celeriac and cashew nut puree, fondant potato, crisp caipers, golden raisin puree, roasted sweet salsify, panko cured liver with a madeira and barley jus. Congratula­tions and well done to him.
